Have you ever tried Bok Choy? It is really healthy and delicious vegetable. Since eating gluten-free for years I love to add different flavors and vegetables in my diet. I like to find out what is the nutritional information in everything I consume.

It turned out Bok Choy is one of the super foods but not really known by many people. Bok Choy is rich in Folate, Vitamin C, K and E, Selenium, Iron, Phosphorous, Calcium, Magnesium, and Zinc.

I would suggest making a salad or stir-frying but you can be creative on how you want to eat it. I love to stir-fry some baby bok choy with onion, garlic, and some gluten-free soy sauce. Hope you will give it a try.
